Made with Suffolk Quince and Bullace foraged from the hedgerows of East Anglia. Quince belongs to the same family as apples and pears and the little known bullace is a variety of wild plum. A versatile, subtly sweet digestif that accompanies cheese particularly well. Also makes a tasty long drink when served with ginger ale and garnished with orange peel.
